Instructions
Step 1
Firstly, in a mixer jar take 1 cup palak, 2 chilli and ¼ cup water. Grind to smooth paste adding water if required. keep aside.
Step 2
In a large wok, heat 2 tbsp oil. Add 1 tsp cumin, ½ inch cinnamon and 1 bay leaf. Saute until the spices turn aromatic. Now add ½ onion, 1 tsp ginger garlic paste and saute until the onions soften slightly. Add ½ carrot, ½ capsicum and saute keeping the veggies crunchy.
Step 3
Further add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder and ½ tsp garam masala. Saute until the spices turn aromatic.
Step 4
Now add prepared palak paste and cook for 2 minutes or until the raw aroma goes. Further add 3 cup of cooked rice, ½ tsp garam masala and ½ tsp salt. Mix gently making sure all the spices are well combined.
Step 5
Add 1 tbsp lemon juice and mix well. Finally, enjoy palak rice recipe with raita or pack it in your lunch box."
